Brownie Recipe

Here is a brownie recipe I made over this past weekend.   They turned out really good. 

MICROWAVE BROWNIES

2 large eggs

1/2 cup granulated sugar 

1/2 cup firmly packed light brown sugar 

3/4 tsp. Vanilla extract

1/4 tsp. Almond extract 

1/2 tsp. Salt

1/2 cup butter, melted

1/2 cup unsweetened natural cocoa powder

3/4 all-purpose flour 

2/3 cup pecans or walnuts, optional

1/3 cup semisweet chocolate chips

Grease and flour an 8-inch square glass microwave-safe baking dish.  Line bottom with parchment if desired.

In a mixing bowl, using a handheld mixer, beat the eggs at medium speed for 30 seconds.  Add both sugars and continue beating for 1 minute,  or until the mixture is very light.  Beat in the vanilla, almond extract,  and salt.  Stir in the melted butter and beat on low speed to blend.   Beat in cocoa power.  With spoon, gently stir in the flour.  Stir in the nuts (if using) and the chocolate chips. 

Heat uncovered in the microwave on high for 3-4 minutes, or until the brownies appear set.  Baking times will vary with wattage.  If you have a turntable, there’s no need to rotate the baking dish, but if you don’t have a turn table, rotate once per minute.  You can tell the brownies are done when they feel firm all over but have a moist spot about 1 1/4 inches across the center.   Let cool completely in the baking dish, then cut into nine squares.

Makes 9 

These turned out very good.  I used Hershey’s Special Dark cocoa powder and oh so yummy.  I also used the white baking chips instead of the chocolate chips.  

I will be making these again.
